Vegan Recipes:

Here are some great recipes for using the Road's End Organics Chreese! We can't take credit for them, they came straight off the Road's End Website.

 

Chreese-Breaded Tofu

1 block of Firm Tofu
1 Packet (1/4 Cup) of Chreese Mix
2 TBSP Olive Oil
2 TBSP Tamari or Soy Sauce

* Slice tofu into slabs
* Marinate slabs in olive oil and soy sauce for 30-45 minutes
* Coat the slabs with Chreese
* Place tofu in a pan with olive oil and fry until brown

You can eat these hot or dice the tofu, once chilled, with veganaise and celery and put on bread.

Chreesy Mashed Potatoes

1 Packet (1/4 Cup) of Chreese Mix
3-4 Medium Sized Potatoes
6-8 oz of soy or other milk
Salt and Pepper to Taste

* Boil enough water to cover potatoes (6-8 cups)
* Cut potatoes into cubes.
* Boil potatoes for 4-6 minutes, until they are soft and able to
be mashed.
* Strain potatoes through collander.
* Return cooked potatoes to pot and begin mashing.
* While mashing and reheating, add milk product and Chreese.
* If potatoes are slightly dry, add a little bit more milk
product and/or 1 TBSP of olive oil or margarine.
* Add salt and pepper to taste.

Chreesy Risotto w/Portobellos and Peppers

3 packets (3/4 Cup) Chreese Mix
1 cup of risotto
1 vegan vegetable buillon cube
2 heads garlic
1 green onion
Some dried and/or fresh herbs:
parsley, rosemary, thyme, basil, and dill
3/4 cup of white wine
handful of portobello mushrooms
1 red pepper
3 TBSP of balsamic vinegar 2-3 tsp of Olive Oil
Salt, Pepper to taste

* Mince 1 head of garlic and 1/2 green onion and begin to sautee
in a large pot or wok with 2 TBSP of olive oil and a splash of
balsamic vinegar.
* Stir in some pepper, parsley, rosemary, and thyme and allow
this to simmer on low to medium heat.
* Add some minced fresh dill and basil and 1/2 cup of white wine.
* After these flavors have mixed, add the correct proportion of
bouillon cube to six cups of water.
* Add this liquid to the pot or wok and mix in the risotto.
* In a separate skillet, add the rest of the diced onion,
garlic, oil, balsamic vinegar, spices, and wine.
* Cut portobellos and red peppers into small pieces.
* Add a little water and cover while flavors penetrate.
* Don't forget to keep stirring the risotto.
* Blend 3 packets or 3/4 Cup Chreese mix with 1 Cup of boiling
water and 1 TBSP Olive Oil in a food processor.
* When the risotto is ready, mix in the portobello/pepper
mixture and fold in the prepared Chreese.
* Serve over a bed of steamed kale or other greens for a
complete, wholesome dish!

Creamy Pesto Sauce

3/4 cup (3 packet worth) of Mozzarella Chreese mix
1 to 1 1/4 cup of Rice Milk (soymilk or other "milk" substitute can
be used)
3 tablespoons of Earth Balance Margarine
1 teaspoon of chopped garlic
1-2 Tbsp Chopped Fresh Basil

* Bring mixture to a boil and simmer until desired consistency
and taste is obtained.
* Can be poured over pasta or chilled and used as salad dressing.
* Additional optional items can be added: fresh rosemary,
mushrooms, etc.

Fake and Chreese Sub

1 packet (1/4 Cup) Chreese Mix
2 sub rolls
Enough seitan or other fake meat to fill 2 rolls
1 tsp of Olive Oil
1 Pepper (optional)
1 Onion (optional)

* Mix Chreese into 5 TBSP of boiling water and Olive Oil (or use 1/4 Cup of pre-made Chreese from food processor).
* Chop onions and peppers if you are using them and saute for 3-4 minutes in a frying pan.
* Slice seitan into desired shape for sub and add to frying pan.
* Season seitan and veggies to your desired liking and cook until satisfied.
* Arrange seitan and veggies into two rows that will fit on your sub rolls.
* Pour Chreese mixture over top of each row, covering thoroughly.
* Cover pan for a few minutes until Chreese is baked on top.
* While Chreese is melting, toast/bake sub rolls to heat if desired.
* Place seitan, veggies, and Chreese onto sub roll and enjoy!!
