No more fussing with a cabinet full of agar and vegan gelatin in hopes of cracking the elusive vegan marshmallow code! Create fluffy vegan marshmallows at home with this innovative Marshmallow Kit from Angel Food of New Zealand.
Each kit contains the special gelling agents and instructions needed for making a big batch of your own vanilla marshies. Economical and fun for all you vegan kitchen warriors!

Each kit will yield about 50 generously sized marshmallows. Please note that you will need some basic ingredients on hand in addition to this Marshmallow Kit. You will need water, starch (such as corn starch, potato starch or tapioca starch), syrup (such as corn syrup, rice syrup or maple syrup), sugar and vanilla extract. This kit requires either a stand mixer or electric hand mixer, as well as a square pan in which to set the marshmallows.

Ingredients: Modified starch (sago), rice starch, agar, and emulsifiers 475 and 471 (all ingredients are plant-derived)

Using this kit will provide you with delicious, vanilla marshmallows. Or try your hand at other fun variations, such as chocolate coating, fruit mix-ins, and much more!

I bought two of these kits. I had a LOT of trouble making the first batch (see http://cracktheplates.com/2009/10/veganmofo-day-1-marshmallows-with-the-angel-food-kit/) but now that I've made the second, I think it's pretty clear that the fault was on my end. The second batch is absolutely beautiful & perfect in every way! It helped to have mise en place this time around--everything pre-measured & set out, ready for use. Other tips: 1) it's not necessary to use a stand mixer: you can use a cheapo hand mixer for all of the work. 2) I recommend blending the first part of the recipe in a metal bowl, because you'll need to pour the very hot syrup into it later...and do you really want to pour that stuff into plastic? ...Not so much. This kit is a great value & will impress your friends, veg & non-veg alike!

I made these marshmallows and they came out great. My only gripe is how long it took...I got so tired of stirring! Regardless, the marshmallows tasted wonderful. The texture was a little different, but the longer you let them sit out, the firmer they will become. I would buy this kit again. =)
