This was my first vegan cookbook and it remains my favorite. I've made lots of the recipes and loved almost all of them (I never should have tried the kale one, I hate kale. But my mom thought the recipe was great!). I've made the Pumpkin Oatmeal Cookies sooo many times and everybody loves them! Some of the recipes call for odd ingredients that I don't even bother trying to find with my limited resources, but most of them are fairly simple or easily alterable to fit with what you have available. The extra things in the book, like some stories, are funny and make it even more enjoyable to just sit down and read.
