It's February, and you know what that means.....
Groundhog Day! Er, no. There's lots of other stuff going on in February besides the sad and silly practice of dragging a groundhog from his home to put on a show somehow involving his shadow. What about Valentine's Day? We like the idea of gifting and eating chocolate much better.

"Where do you get your Protein?"

As a vegan, do you just get sick of that question? We all do. Of course by now you probably know that eating a varied diet of plant foods can provide you with all of the protein you need. But do you know where exactly your protein is coming from, and how much of it you actually need? Well read on to find out, my tofu loving friend. Strict protein combining is not necessary, as long as you are consuming a good variety of plant foods and enough calories throughout the day.

To meet protein recommendations, the typical adult male vegan needs only 2.5 to 2.9 grams of protein per 100 calories and the typical adult female vegan needs only 2.1 to 2.4 grams of protein per 100 calories. The following is a list of some common foods in a vegan diet, and how much protein they provide:

-Tofu, 4 ounces 11 grams Cooked Lentils,1 cup 18 grams (see recipe below)
-Seitan, 3 ounces 31 grams
-Cooked Black Beans,1 cup 15 grams
-Tempeh,1 cup 41 grams
-Cooked Chickpeas,1 cup 12 grams
-Cooked Quinoa, 1 cup 9 grams
-3 oz.Bagel 9 grams
-Peanut Butter, 2 Tbsp 8 grams
-Cooked Brown Rice, 1 cup 5 grams
-Whole Wheat Bread, 2 slices 5 grams
-Soy Milk, commercial,1 cup 7 grams

Almost all vegetables, beans, grains, nuts, and seeds contain some protein. Fruits, sugars, fats, and alcohol do not provide much protein, so a diet based only on these foods would have a good chance of being too low in protein. The moral of this story? Eat a varied diet of real, whole food with plenty of calories, and you will have all of the protein your body requires. This information was obtained from The Vegetarian Resource Group. Slow-Cooker Lentil Soup

It's still pretty chilly here in Georgia, and in most of the country. What does that mean? Why... it's soup weather! Leigh decided to break out our slow-cooker, which is not used nearly enough
in our house. Here is our new favorite Lentil Soup recipe, made in the slow-cooker.

We had these with the "Buttermilk" Biscuits from Yellow Rose Recipes for a perfect light dinner.

Slow-Cooker LentilSoup

  • Slow-Cooker LentilSoup
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 2 cans of brown lentils (gasp! canned? the
    horror! Of course you can used
    dried lentils instead, you purist.)
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1/2 cup chopped fresh parsley
  • 1 tsp red pepper flakes
  • 1 tsp dried basil
  • splash of olive oil
  • salt & pepper to taste

Set slow cooker to fastest setting (ours is four hours). Coat the bottom with olive oil, and add the onions and garlic. Let those warm for about ten minutes, then add the rest of the ingredients except for the fresh parsley.
Cook with the lid on for 2-3 hours, until carrots are soft. Add parsley. Take immersion blender and pulse around in the pot until mostly smooth, but with a few lumps.
Eat a ton of it, until your stomach feels like exploding from the gas pressure. Hey, this is lentils we're talking about here. Enjoy!
