Hello
Friends,
It's February, and you know what that means.....
Groundhog Day! Er, no. There's lots of other stuff going on in
February besides the sad and silly practice of dragging a groundhog
from his home to put on a show somehow involving his shadow. What
about Valentine's Day? We like the idea of gifting and eating
chocolate much better.
There's still
time to buy some Valentine
Day Gifts for your vegan sweetie. We have chocolates,
candles, bags, candy, cookies...lots of stuff! Click here
for our complete listing of valentine gift ideas. To
be on the safe side, be sure to order using USPS Priority by Friday,
February 8th, or UPS Ground by Wednesday, February 6th for delivery
before the big day.
Oh, we have
so many new

We are also
super excited to have found some local vegan artists who make
beautiful, handmade goods. We now offer some funky, one-of-a-kind

"Where
do you get your Protein?"
As a vegan,
do you just get sick of that question? We all do. Of course
by now you probably know that eating a varied diet of plant
foods can provide you with all of the protein you need. But
do you know where exactly your protein is coming from, and
how much of it you actually need? Well read on to find out,
my tofu loving friend. Strict protein combining is not necessary,
as long as you are consuming a good variety of plant foods
and enough calories throughout the day.
To meet
protein recommendations, the typical adult male vegan needs
only 2.5 to 2.9 grams of protein per 100 calories and the
typical adult female vegan needs only 2.1 to 2.4 grams of
protein per 100 calories. The following is a list of some
common foods in a vegan diet, and how much protein they provide:
-Tofu, 4 ounces
11 grams Cooked
Lentils,1 cup 18 grams (see recipe below)
-Seitan,
3 ounces 31 grams
-Cooked
Black Beans,1 cup 15 grams
-Tempeh,1
cup 41 grams
-Cooked
Chickpeas,1 cup 12 grams
-Cooked
Quinoa, 1 cup 9 grams
-3
oz.Bagel 9 grams
-Peanut
Butter, 2 Tbsp 8 grams
-Cooked
Brown Rice, 1 cup 5 grams
-Whole
Wheat Bread, 2 slices 5 grams
-Soy
Milk, commercial,1 cup 7 grams
Almost
all vegetables, beans, grains, nuts, and seeds contain some
protein. Fruits, sugars, fats, and alcohol do not provide
much protein, so a diet based only on these foods would have
a good chance of being too low in protein. The moral of this
story? Eat a varied diet of real, whole food with plenty of
calories, and you will have all of the protein your body requires.

Group. For more information on protein in the vegan diet,

Slow-Cooker Lentil Soup
It's
still pretty chilly here in Georgia, and in most of the
country. What does that mean? Why... it's soup weather!
Leigh decided to break out our slow-cooker, which is not
used nearly enough
in our house. Here is our new favorite Lentil Soup recipe,
made in the slow-cooker.
We had
these with the "Buttermilk" Biscuits from Yellow
Rose Recipes for a perfect light dinner.

-
-
-
-
-
2
cans of brown lentils (gasp! canned? the
horror!
Of course you can used
dried
lentils instead, you purist.)
-
-
-
1/2
cup chopped fresh parsley
-
-
-
-
Set
slow cooker to fastest setting (ours is four hours). Coat
the bottom with olive oil, and add the onions and garlic.
Let those warm for about ten minutes, then add the rest
of the ingredients except for the fresh parsley.
Cook with the lid on for 2-3 hours, until carrots are soft.
Add parsley. Take immersion blender and pulse around in
the pot until mostly smooth, but with a few lumps.
Eat a ton of it, until your stomach feels like exploding
from the gas pressure. Hey, this is lentils we're talking
about here. Enjoy!
