We have some new food products in stock this week, including the single most requested product in the history of Cosmo's. Daiya Vegan Cheese is shredded, meltable, stretchable, soy-free, and available here! Daiya Vegan Cheese is a perishable, refrigerated food. Therefore, Daiya does require shipping with a cooler and ice pack. If shelling out the extra $5.99 for the cooler & ice pack hurts a bit, you may want to consider adding some refrigerated products to your order to get more bang for your buck. We can fit 6-10 refrigerated foods in one cooler, so if you only want one or two bags of Daiya, perhaps we can interest you in some other cooler goodies? Unfortunately the cooler is necessary in order to have your Daiya Vegan Cheese arrive to you safe and ready to eat. It's so worth it though, ya'll. Daiya makes every meal better. The folks at Chicago Soy Dairy have a new blog called Go Vegan Go, where you can find some great recipe ideas using Teese. We want to share another one of our favorite Teese recipes with you, too. Straight from the Cosmo's Test Kitchen, here's our recipe for Vegan Stuffed "Chicken" Parm:




Vegan Stuffed "Chicken" Parm
serves 4 little mouths or 2 big mouths

1 lb. Match Ground "Chicken", thawed
1/2 cup grated Mozzarella Teese
2 Tbsp Chik-Style Seasoning, or other vegan "chicken style" seasoning
1 tsp dried thyme
1 tsp black pepper
1 cup unsweetened soy milk
2 cups vegan panko breadcrumbs
2 Tbsp brown mustard
oil for frying

First, heat up your skillet over medium heat.
Clean an area on your counter to spread out the Match Meat. A large, flat surface is best. Roll out the Match "chicken" into a large rectangle about 1/4" thick. Sprinkle about half of the seasonings over the Match Meat evenly, patting it in here and there. Flip your rectangle, and season up the other side.

Sprinkle the grated Teese over one side of the rectangle. Fold over your rectangle, sandwiching the Teese in the middle. Press the ends of the rectangle shut, and evenly cut into four equal-ish squares. Set aside.

In a medium sized bowl, whisk together the soy milk with the mustard. In a second bowl, pour in the breadcrumbs. Dip each square into the soy milk mixture, then into the breadcrumbs, coating evenly. Toss into the hot skillet, and continue with the rest of your pieces. Brown evenly on each side, then serve on a bun with pizza sauce of your choice. This is great without a bun, too.

Here's a recipe from the Cosmo's Test Kitchen, using our favorite Teese flavor, Mozzarella.



Garlic & Mozzarella Quick Bread

Dry Ingredients:
1 1/3 cup all purpose flour
1 1/2 cup whole wheat pastry flour
1 Tbsp baking powder
1 Tbsp baking soda
1 tsp salt

Wet Ingredients:
1 1/2 cup plain soy milk
2/3 cup canola oil
1/4 cup + 2 Tbsp non dairy yogurt (we used plain coconut milk yogurt)
4-5 cloves worth of minced garlic

1/2 cup shredded mozzarella Teese
8-10 fresh basil leaves, cleaned and chopped into small pieces

Preheat oven to 350F. Spray two loaf pans with canola oil spray.

In a large bowl, combine the wet ingredients including the minced garlic. In a separate bowl, combine the dry ingredients. Sift or stir until well mixed. Combine the wet ingredients into the dry ingredients using a spoon or whisk. Mix until incorporated, but be careful not to over mix.

Fold in the shredded mozzarella and chopped basil. Pour batter into each loaf pan, filing each pan equally. Top the loaves with some sliced tomatoes for decoration, if you would like. I recommend using a less juicy type of tomato, like Roma.

Bake in the oven for 50 minutes, or until a toothpick inserted in the middle comes out clean. let cool before slicing.

We are always in need of small to medium boxes, packing peanuts, bubble wrap, and packing paper, so please feel free to bring us whatever you can't find a use for. Reduce, Reuse, Recycle!

In Cosmo's news, we want to give everyone an update on the Daiya Vegan Cheese from Canada. Lately we have been completely inundated with calls and emails asking when we plan on carrying this hot new vegan product, and we want to let you know that we have spent the past few months working on getting in Daiya. And it looks like it is finally going to happen! We are still working out the details, but keep your eyes peeled for Daiya Vegan Cheese online and in our store in the next 3-4 weeks.
