Southern-Style Fried "Chikin"
Born
and raised in the deep south, Leigh knows her greasy, fried foods.
Every now and then she likes to add some fattening flair to her
usually healthy vegan dinners. Serve this "Chikin" with
a side of nice greens, if it makes you feel any better.
6-8 "Chikin"
Cutlets
3 cups vegetable or mock "chicken" broth
1/3 cup canola oil (or other oil suited to med-high heat)
1 Tbsp plain soymilk
2 Tbsp dijon mustard
2 Tbsp vegan
Canola Mayo
1 cup all-purpose flour
1 Tbsp cornmeal
1 Tbsp constarch
2 Tbsp nutritional
yeast
2 tsp salt
1 tsp onion powder
1 tsp black pepper
In a medium saucepan, bring broth to a boil. Add the "Chikin"
Cutlets, then turn down to a simmer. Simmer the cutlets for 5-8
minutes, until they are soft. Drain the cutlets and let them sit
for a bit so they are not too hot to the touch.
In a small bowl, whip together soymilk, mustard, and mayo.
In a medium bowl, combine flour, cornmeal, cornstarch, nutritional
yeast, and spices.
Heat oil in a large frying pan over medium-high heat.
Take one cutlet and dip it in the wet mixture until evenly covered.
Then dip it in the dry mixture until evenly coated. Place cutlet
into heated, oiled, frying pan. Repeat with other cutlets. Fry
evenly on both sides until golden brown. Try not to flip the cutlets
too much, or you may lose some of your coating.
Drain cutlets on several layers of paper towls or on a brown paper
bag to soak up the excess oil, then devour at will!
Serves 2 very hungry or 4 not so hungry.
