In addition to being an amazingly delicious vegan alternative to cheese, Daiya is also completely free from common allergens such as soy, nuts, corn or gluten. A soy-free vegan cheese that actually tastes great? Yes!

Daiya is currently available in three varieties: Mozzarella Style, Cheddar Style and Pepperjack. Daiya is packed in 8 oz. bags, which is enough cheese for one 14" pizza, or quite a few grilled cheese sandwiches. Here are some recommendations from the manufacturer for how to best use Daiya:

Ingredients (Cheddar & Mozzarella): Filtered water, tapioca and/or arrowroot flours, non-GMO expeller pressed canola and/or non-GMO expeller pressed safflower oil, coconut oil, pea protein, salt, inactive yeast, vegan natural flavors, vegetable glycerin, xanthan gum, citric acid (for flavor), annatto

Cooking with Daiya
You can use Daiya in the same way you would use regular cheese.

Pizza Volumes:
It is important to use the optimum amounts of Daiya on pizza for best performance. Below are optimum recommendations resulting from performance tests in mass market pizza franchises throughout North America. 10 inch=110 grams (4oz); 12 inch=160 grams (5.5 oz); 14 inch=220 grams (8 oz); 16 inch=280 grams (10 oz); 18 inch=358 grams (1.5 oz)

Baking with Daiya:
Use Daiya as you would regular cheese. For best results (as a topping such as the top layer of a lasagna) add Daiya in the last 5 - 10 minutes (depending on temperature) when baking. This will yield smooth melting properties without excessive browning. Tip: Try adding Daiya at the very end after baking is finished, by sprinkling a shredded layer on top of oven-hot food and covering for a few minutes. This preserves the most nutrients and maintains optimum resilience.

Microwave:
Daiya works great in the microwave in tortillas, burittos and whatever you normally would cook with cheese in the microwave. Be careful not to overcook Daiya as like dairy based cheese, it will become tough.

Storage:
Always keep refrigerated. Once you receive your Daiya from Cosmo's, consume or freeze within one week.

Freezing Daiya:
You can freeze Daiya and use it as you normally would after thawing. Like most food products, do not freeze, thaw and re-freeze.

I highly recommend this Vegan "cheese" alternative. It tastes delish, melts great, and has worked well in every recipe I've made so far (ex: pizza, nachos, burritos, lasagna, on tortillas, grilled cheese sandwiches, mac and cheese, on top of baked veggies etc.) I love the Mozzarella and Cheddar flavors. It's the BEST Vegan "cheese" ever made in my opinion. And I've been an Ethical Vegan for 20+ years and have tried a LOT of yucky, rubbery, unpalatable vegan/soy/rice/hemp cheeses in my time. Daiya is exceptional and I cannot find enough uses for it. It's become a STAPLE in my fridge. ♥

For pizzas, casseroles, quiches, grilled sandwiches, anything that needs some melted cheese, this is my go-to vegan cheese. It melts and stretches just like it says it will. The taste is pleasant, but more reminiscent of American cheese in my opinion... much better than the soy based cheeses available in my area, though. For taste, I prefer Dr. Cow, but it's more costly and limited in it's uses compared to Daiya.

The smell and taste of this stuff makes me GAG! I absolutely HATED it. That being said, I made a vegan enchilada (I call it "ain'tchilada) casserole with it and my mom and husband LOVED it. My husband makes grilled cheeses with it. =-/ If you haven't tried nut cheeses, TRY THEM. They are great. I am partial to almond cheese, but I can't find any on this site (yet).

I've been vegan for 13yrs and have tried just about every cheese substitute. This is by far the best! Both flavors have great tastes and the cheese actually melts and stretches too! Even my non-veg husband and step-son like it! That's not as easy feat for dairy eaters. It makes great grilled cheese and pizzas! :) Yum!!!

after trying & experimenting with every other vegan cheese out there, I must say Daiya is the best! it's the only one that truly melts & has a flavor that actually resembles dairy cheese. so far i've made pizza, quesadillas, & lasagna with it.... & all have been approved by non-veg friends!

It makes the most amazing nachos! The cheddar tastes more like American cheese than cheddar cheese, but it's really fantastic. I never thought we'd ever have a really good vegan cheese, but we do now!

This stuff is really good. Made a great mac and cheese - even better the second day when reheated. I have shared with several of my vegan friends and they all think it is great too. I have tried both the cheddar and the Italian.
I have really missed cheese since becoming vegan; going to try a lasagna next. Yum!
Will be reordering soon and have several more friends that want to order too.

...but equally good, taste-wise... and better overall, because it's cruelty free! Tried the Italian, last Sunday, at a vegan pizzeria in Boston. Loved it so much, I brought home a container. A nice cheesy, yet nutty flavor. Savory and very pleasant. Melts VERY well! Let your taste buds evolve! (no change = no change) Will be trying the cheddar, and buying more of the Italian!

I have not had the pleasure to cook with this amazing stuff yet, but I did try it at a local Pizza joint. Even the reasons some people don't like it: tastes like Kraft, sticks to your teeth still supersedes all of my Vegan Pizza experiences. I've tried/baked it all : Teese Mozz, Cheezly, Sheese, FYH, Tofutti slices, and various Uncheeses from the Uncheese cookbook. All were tolerable, but had their quirks. The Half Shroom/Half Tomato/Basil/Garlic Daiya Italian Blend Pizza I had really blew my mind. Sooo creamy. My Vegetarian friend approved too. I think I can convince my Omni friends to finally try one of my Vegan Pizzas. Off to buy some Daiya cheese.
